Ingredients:

  • Crust
  • 4 Tbsp. light butter, room temperature
  • 2 Tbsp. unsweetened applesauce
  • ¼ cup Truvia Cane Sugar Baking Blend
  • 1 cup whole wheat flour
  • Lemon zest of one lemon
  • Filling
  • 4 large eggs
  • 4 Tbsp. light butter
  • ¾ cup Truvia Cane Sugar Baking Blend
  • ½ cup lemon juice (4 lemons)
  • Lemon zest of one lemon
  • 2 Tbsp. cornstarch

Directions:

  1. Preheat oven to 350 degrees F. Line 8 x 8 baking pan with parchment paper.
  2. In a medium sized, combine crust ingredients.
  3. Pour into baking dish and press down to form a base. Bake for 20 minutes.
  4. In a medium size pot, melt butter over medium heat. Add eggs, Truvia, lemon juice and lemon zest. Adjust heat to low. Let sit for 2 minutes.
  5. Turn off heat and add corn starch.
  6. Once base is done baking, remove from oven and add filling. Return to oven and bake for 25 minutes or until set.
  7. Allow to cool for 1 hour then refrigerate for at least 2 hours.
