Summertime calls for fresh fish and flavorful flatbreads! This Mahi Mahi Flatbread Sandwich has both, making it the perfect light and healthy meal for warm weather and sunshine.

Mild and sweet mahi mahi is the star of the show in this easy sandwich recipe submitted on our Recipe Submission page. To make this tasty flatbread sandwich, place one multigrain flatbread on a plate. Cathy recommends the 5 grain flax flatbread by the brand Flatout Foldit Flatbread. Spread one tablespoon of hummus across the flatbread, then top it with two lettuce leaves and chopped veggies like red bell peppers, onions and tomatoes. Chop up some cooked mahi mahi and place it on to the flatbread, followed by a sprinkle of feta cheese and some lemon juice. Fold the flatbread over and enjoy!

  • 1 multigrain flatbread (such as 5-grain flax flatbread by Flatout Foldit)
  • 1 Tbsp. hummus
  • 2 small lettuce leaves
  • 1 Tbsp. red pepper, chopped
  • 1 Tbsp. red onion, chopped
  • 1 Tbsp. tomato, chopped
  • 1 Tbsp. feta cheese
  • 3 oz. cooked mahi mahi, chopped
  • Juice of 1 lemon


  1. Spread hummus onto the flatbread.
  2. Top flatbread with the veggies, cooked fish, feta and lemon juice
  3. Fold over the flatbread.
