Ingredients:

  • 4 boneless chicken breasts (4-oz. each)
  • ½ cup whole wheat bread crumbs
  • 2 tsp. Italian seasoning
  • 2 tsp. garlic powder, divided
  • ½ tsp. onion powder
  • ½ tsp. salt
  • ½ tsp. ground black pepper
  • 2 Tbsp. finely grated parmesan cheese
  • 3 Tbsp. egg whites
  • 1 Tbsp. olive oil
  • 1 lb. green beans, ends trimmed
  • ½ cup marinara sauce, no sugar added
  • ¼ cup low fat shredded mozzarella cheese
  • Chopped fresh basil, for serving

Directions:

  1. Preheat oven to 425°F.
  2. Line baking sheet with foil and mist with nonstick cooking spray. Set aside.
  3. Add bread crumbs, Italian seasoning, 1 tsp. garlic powder, onion powder, salt, pepper and parmesan cheese to a gallon size zip-top bag. Seal bag and shake.
  4. Add egg whites to a shallow dish.
  5. Working one chicken breast at a time, coat chicken in egg whites and add to bread crumb mixture. Press bread crumbs into chicken so they adhere to both sides.
  6. Place chicken breasts in the center of the prepared baking sheet. Bake for 15 minutes.
  7. While chicken is baking, combine green beans, olive oil and remaining tsp. of garlic powder in a large bowl and mix. Remove pan from oven, flip chicken and spread green beans around the chicken.
  8. Return to oven and bake for an additional 10 minutes.
  9. Remove from oven and spoon 2 Tbsp. of marinara sauce and sprinkle 1 Tbsp. of mozzarella cheese on each chicken breast. Broil 1 to 2 minutes until cheese is melted and bubbly.
  10. Sprinkle with basil before serving.
