Servings: 4 (1 tortilla, ¼ tofu, 2 slices avocado, 1 Tbsp. salsa, 1 Tbsp. Greek yogurt)

Ingredients:

  • Tofu Marinade
  • 2 Tbsp. tomato paste
  • 1 Tbsp. canned diced green chiles (mild or hot)
  • 1 Tbsp. apple cider vinegar
  • 1 Tbsp. water
  • 1 tsp. maple syrup
  • 2 cloves garlic
  • 1 tsp. nutritional yeast
  • 1 tsp. cumin
  • ½ tsp. chili powder
  • ¼ tsp. red chili flakes
  • ¼ tsp. ground black pepper
  • ¼ tsp. sea salt
  • Fajitas
  • 1 lb. extra firm tofu, drained, pressed and cubed
  • 3 medium bell peppers, ~1/2 inch slices
  • 1 small red onion, ~1/2 inch slices
  • 4 8-inch whole wheat tortillas
  • Toppings
  • 4 lime wedges
  • ½ avocado, thinly sliced (8 slices)
  • Salsa (optional)
  • Plain nonfat Greek yogurt (optional)

Directions:

  1. Preheat oven to 425°F.
  2. Combine tofu marinade ingredients in a food processor or blender and puree until smooth. Toss tofu cubes with marinade and set aside for at least one hour.
  3. On baking sheet lined with parchment paper arrange tofu pieces in a single-layer on 1/3 of the pan. Repeat with bell peppers and onion.
  4. Bake in preheated oven for 30 minutes, tossing halfway through. When 10 minutes remain, place tortillas, wrapped in foil, in the oven to warm.
  5. Serve with lime wedges, avocado slices, salsa and Greek yogurt.
