Ingredients:
- 2 cups cooked lentils (black or green)
- 1 cup pomegranate seeds
- ½ cup red onion, finely diced
- 1 cup parsley, chopped
- ½ cup sunflower seeds
- 2 Tbsp. extra virgin olive oil
- 4 Tbsp. pomegranate juice
- 1 Tbsp. pomegranate molasses or honey
- 1 lemon, zest and juice
- 1 tsp. coriander
- 1 tsp. cumin
- Salt and pepper, to taste
- ½ cup goat cheese crumbles
- Whole wheat pita bread or mixed greens, for serving (optional)
Directions:
- Add lentils, pomegranate seeds, red onion, parsley and sunflower seeds to a medium bowl. Mix together.
- In a small bowl, whisk together olive oil, pomegranate juice, pomegranate molasses, lemon juice and zest, coriander and cumin. Whisk to combine. Season with salt and pepper.
- Pour dressing over lentil mixture, mix well and allow to sit for 20-30 minutes for flavors to meld.
- Sprinkle with goat cheese prior to serving. Enjoy plain, with sliced whole wheat pita bread or over mixed greens as a salad.
