- ½ cup peanut butter
- ¼ cup unsweetened cocoa powder
- 2 Tbsp. Truvia® Brown Sugar Blend
- 1 tsp. vanilla extract
- 1 large egg
- ½ tsp. baking soda
- ¼ cup unsweetened finely shredded coconut
- Preheat oven to 350 F.
- In a medium bowl, stir all ingredients except for the coconut.
- Roll dough into 1-inch balls and place on a greased baking sheet.
- Bake for 7 minutes. Let cool for 5 minutes.
