Ingredients:
- 15 g active sourdough starter (approx. 1 Tbsp.)
- 50 g all-purpose flour (approx. 1/3 cup + 1 Tbsp.)
- 50 g water (approx. 3 ½ Tbsp.)
- Sourdough starter
- 255 g water (approx. 1 cup + 1 Tbsp.)
- 30 g honey (approx. 1 ½ Tbsp.)
- 500 g bread flour (approx. 4 cups + 2 Tbsp.)
- 1 pinch of salt
- Sesame seeds
- Everything bagel seasoning
- Cinnamon
- Poppy seeds
Directions:
- Sourdough Starter Prep
- Combine sourdough starter prep ingredients in a bowl or jar. Cover and let sit for at least 12 hours or until it doubles in size and bubbles.
- Bagel Dough
- Combine sourdough starter, water, hone, and salt. Add in bread flour. Use a mixer with a dough hook for 6-7 minutes or knead by hand for about 10 minutes. Cover and let rest for about 8-12 hours.
- Flour surface. Divide dough into 8 equal pieces. Shape each piece into a ball and then poke a hole in the center using your thumb. Continue to shape the dough to mimic a bagel. Place on baking sheet lined with parchment paper. Repeat with remaining dough. Cover and let sit for 60 minutes.
- Preheat oven to 425°F. Bring a large pot of water to a boil. Add 2-3 bagels at a time into boiling water and let sit for 4 minutes, making sure bagel is flipped halfway through. Return bagel to baking sheet. Top with favorite toppings.
- Bake the bagels in the center of the oven for about 26-30 minutes or until golden brown.
