Ingredients:

  • 2 cups riced cauliflower
  • 1 Tbsp. olive oil
  • 1 small onion, diced
  • 1 tsp. garlic powder
  • 1 tsp. cumin
  • 1 tsp. chili powder
  • ¼ tsp. paprika
  • ¾ cup fire roasted diced tomatoes
  • 1 Tbsp. fresh cilantro, chopped

Directions:

  1. In a large skillet, heat oil to medium-high.
  2. Add onion and sauté until translucent.
  3. Add cauliflower, garlic powder, cumin, chili powder and paprika. Stir and cook until cauliflower rice is cooked through.
  4. Stir in and combine fire roasted tomatoes.
  5. Garnish with chopped cilantro.
