On Nutrisystem, Count As: 2 Vegetables and 2 Extras
- 2 cups riced cauliflower
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon chili powder
- ¼ teaspoon paprika
- ¾ cup fire roasted diced tomatoes
- 1 tablespoon fresh cilantro, chopped
- In a large skillet, heat oil to medium-high.
- Add onion and sauté until translucent.
- Add cauliflower, garlic powder, cumin, chili powder and paprika. Stir and cook until cauliflower rice is cooked through.
- Stir in and combine fire roasted tomatoes.
- Garnish with chopped cilantro.
