On Nutrisystem, Count As: 1 SmartCarb, 2 PowerFuels, 1 Vegetable

Ingredients:

  • 6 oz boneless chicken breast
  • 1 cup cooked spinach
  • ½ cup low fat pepperjack cheese
  • 1 cup cooked quinoa
  • 1 Tbsp. bread crumbs
  • ½ tsp. cajun seasoning
  • ½ tsp. paprika
  • Black pepper, to taste

Directions:

  1. Preheat oven to 350 F.
  2. Cut down the side of the chicken to make a pocket.
  3. In a small bowl, combine cheese, spinach, quinoa and pepper.
  4. Spoon the spinach mixture into the pocket of the chicken. Fasten with toothpicks.
  5. Sprinkle chicken with Cajun, paprika and bread crumbs.
  6. Top with any remaining spinach mixture.
  7. Place chicken onto a foil-lined baking sheet. Bake for 45-60 minutes or until chicken is cooked through.
