Ingredients:

  • 1 lime, zested and juiced
  • 1 ½ Tbsp. olive oil
  • ½ Tbsp. Cajun seasoning
  • 1 tsp. chili powder
  • 16 oz halibut fillet
  • 1 small red onion, chopped
  • 1 jalapeno pepper, seeded and chopped
  • 2 cloves garlic, minced
  • 6 tomatillos, peeled and chopped
  • ¼ tsp. black pepper
  • ½ tsp. ground cumin
  • 1 lemon, zested and juiced
  • 2 tsp. honey
  • ½ avocado, diced
  • 2 tomatoes, diced
  • ¼ cup mango, diced into small pieces
  • 4 whole wheat 6-inch flour tortillas
  • 1 cup red cabbage, shredded
  • Cilantro to garnish

Directions:

  1. For marinade: In a small bowl, combine lime zest, juice, ½ Tbsp. olive oil, Cajun seasoning, and chili powder. Coat fish with dressing and let it sit for 30 minutes.
  2. For Tomatillo Sauce: Heat medium skillet with remaining 1 Tbsp. of oil over medium heat. Add the onions, jalapenos and garlic. Sauté for a few minutes or until the mixture begins to soften.
  3. For Tomatillo Sauce: Add chopped tomatillos. Season with black pepper and cumin. Cook for 6-7 minutes or until tomatillos soften.
  4. For Tomatillo Sauce: Add tomatillo mixture to food processor with lemon zest, juice and honey. Process until it becomes a thick salsa.
  5. Heat skillet over medium heat and coat with cooking spray. Add fish and cook for 3 to 4 minutes on each side.
  6. Serve fish with tortillas and top with cabbage, tomatoes, mango, avocado and tomatillo salsa. Garnish with cilantro.
