Our Asparagus Caprese Salad recipe is super simple to craft and will be ready in minutes. The bed of the salad is just like a classic caprese—tomatoes, mozzarella cheese and fresh basil along with red onions and, of course, the asparagus. On Nutrisystem, Count As: 1 PowerFuel, 1 Vegetable and 1 Extra
- 1 lb. asparagus, ends trimmed, remains cut into 2-inch pieces
- 1 cup cherry tomatoes, halved
- ¼ red onion, diced
- 2 Tbsp. fresh basil, chopped
- 4 oz. mozzarella cheese, part skim, cut into 1” pieces
- 2 Tbsp. balsamic vinegar
- 1 Tbsp. olive oil
- 1 tsp. Dijon mustard
- Bring large pot of water to a boil. Add asparagus to boiling water and boil for 4-5 minutes.
- Drain asparagus and run over cold water.
- Transfer to a bowl with tomatoes, onion, and basil.
- In a separate container, mix the vinaigrette ingredients. Pour in salad and toss.
- Top with mozzarella cheese.
