Our Asparagus Caprese Salad recipe is super simple to craft and will be ready in minutes. The bed of the salad is just like a classic caprese—tomatoes, mozzarella cheese and fresh basil along with red onions and, of course, the asparagus. Ingredients:

  • Salad
  • 1 lb. asparagus, ends trimmed, remains cut into 2-inch pieces
  • 1 cup cherry tomatoes, halved
  • ¼ red onion, diced
  • 2 Tbsp. fresh basil, chopped
  • 4 oz. mozzarella cheese, part skim, cut into 1” pieces
  • Vinaigrette
  • 2 Tbsp. balsamic vinegar
  • 1 Tbsp. olive oil
  • 1 tsp. Dijon mustard

Directions:

  1. Bring large pot of water to a boil. Add asparagus to boiling water and boil for 4-5 minutes.
  2. Drain asparagus and run over cold water.
  3. Transfer to a bowl with tomatoes, onion, and basil.
  4. In a separate container, mix the vinaigrette ingredients. Pour in salad and toss.
  5. Top with mozzarella cheese.
