Combine coconut oil, maple syrup and vanilla extract until melted and boiling. Remove from heat and stir in a dash of salt. Let this mixture cool for about two minutes. Drizzle the “caramel” on top of three cups of air-popped popcorn, spread out on parchment paper, and let cool for 30 minutes so the caramel can harden.

Ingredients:
- 3 cups air popped popcorn
- ¼ cup sugar free maple syrup
- 1 Tbsp. coconut oil, melted
- 1 tsp. vanilla extract
- Dash of sea salt
Directions:
- Combine oil, syrup and vanilla in a small saucepan. Boil for 2 minutes then remove from heat and stir in dash of salt. Let cool for 2 minutes.
- Drizzle on popcorn and toss to coat.
- Spread out onto parchment paper to cool for 30 minutes.
