Did you know that you can enjoy a hearty burger and still lose weight? Our Grilled Foil Packet Cheeseburger and Veggies recipe pairs a tender, lean beef burger patty with creamy cheddar cheese and a medley of veggies. To make the burger, simply combine ground beef with an egg, garlic powder and black pepper and form it into patties. For the vegetables, mix together sliced onions, chopped zucchini and quartered baby potatoes with a little olive oil and pepper.

Spray four sheets of foil with nonstick cooking spray, then fill them up with the vegetables. Top each one with a burger patty and seal up the foil into packets. Throw them on a grill for 40 to 45 minutes or until the potatoes are soft and the burger is fully cooked. Once it’s done, open up the packets and place a slice of low-fat cheddar cheese on top of each burger patty. Close it up for another two to three minutes until the cheese is nice and melted.

Ingredients:

  • 1 lb. lean ground beef
  • 1 egg
  • ½ tsp. garlic powder
  • 2 cups baby potatoes, quartered
  • 2 cups zucchini, chopped
  • 1 onion, sliced
  • 1 Tbsp. olive oil
  • 4 slices cheddar cheese, low fat, thinly sliced
  • Black pepper, to taste

Directions:

  1. Preheat grill or campfire.
  2. In a bowl, combine ground beef, egg, garlic powder and black pepper. Form into 4 patties.
  3. In another large bowl, mix together the onions, potatoes, zucchini, olive oil and black pepper.
  4. Spray 4 foil sheets with nonstick spray. Place ¼ of the vegetables in the center of each foil sheet. Top with beef patty. Seal packets.
  5. Grill for 40-45 minutes or until potatoes are soft and burger is cooked.
  6. When done, open foil and add a slice of cheese on to the burger. Close and cover for 2-3 minutes or until cheese is melted.
