Ingredients:

  • 1 cup whole wheat pastry flour
  • 2/3 cups cocoa powder
  • ½ tsp. baking powder
  • ½ tsp. salt
  • 2 large eggs
  • ¼ cup skim milk  
  • 1 tsp. mint peppermint extract
  • 1 5.3 oz. container nonfat vanilla Greek yogurt
  • 20-30 drops liquid stevia  
  • ¼ cup mini chocolate chips
  • 2 Tbsp. crushed peppermint candies or candy canes

Directions:

  1. Preheat oven to 350° F. Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking powder and salt. In a separate bowl, whisk together egg, Greek yogurt, skim milk, peppermint extract and Stevia.
  3. Slowly add dry ingredients to wet and stir until just combined. Fold in mini chocolate chips and crushed peppermint. Refrigerate dough for 20-30 minutes.
  4. Scoop level tablespoons of cookie dough onto the prepared baking sheets.
  5. Bake for 8 to 9 minutes. Cool on the baking sheets for several minutes before transferring to a wire rack to cool completely.
