Ingredients:

  • Nonstick cooking spray
  • ¼ cup yellow cornmeal
  • ¾ cup fat-free milk
  • 2 egg whites
  • 1 egg
  • ¼ cup part-skim ricotta cheese
  • ½ tsp. salt
  • Pinch of ground black pepper
  • 2 cups frozen corn, thawed
  • ¼ cup chopped fresh chives

Directions:

  1. Preheat oven to 350°F. Spray 8 x 8 baking dish with nonstick cooking spray.
  2. In a large bowl, whisk together cornmeal, milk, egg whites, egg, ricotta cheese, salt and pepper. Fold in corn and chives.
  3. Pour batter into prepared baking dish. Bake for 40 minutes, until center is set. Broil for 1-2 minutes until lightly browned.
  4. Allow the pudding to rest for 5 minutes before serving.
