- 1 cucumber (English cucumber preferred)
- 3 oz crab meat
- 1 Tbsp. lemon juice
- 1 tsp. light mayonnaise
- 2 Tbsp. cilantro, minced
- ¼ cup red onion, diced
- Old Bay, to taste
- Cut cucumber into one-inch slices. Scoop out the center of the cucumber.
- In a bowl, mix together crab meat, lemon juice, mayonnaise, cilantro, red onion and cilantro.
- Fill each cucumber cup with crab mixture. Sprinkle with old bay.
