Crispy Brussels Sprout Chips with Garlic Aioli

To start things off, you’ll want to preheat your oven to 400 degrees. Next, grab a cutting board and your knife of choice and cut the stems off the Brussels sprouts. Once done, pick off as many leaves from the bud as you can by using your hands. When finished, transfer the leaves to a baking sheet. Toss the leaves with olive oil and season with salt and pepper.

Evenly spread the Brussels sprouts out into a single layer on the baking sheet. Toss the baking sheet into the oven for about 10 to 12 minutes or until the Brussels sprouts are crispy and browned. Set the baking sheet aside and let cool for 10 minutes. (You’ll be tempted to grab one right away—but be careful, they’re hot!)

And don’t worry—we didn’t forget about the delicious, homemade garlic aioli dipping sauce! Grab your blender or food processor and add a half cup of nonfat plain Greek yogurt, one teaspoon of honey, one garlic clove, one teaspoon of lemon juice, a half teaspoon of dried dill and finally, add salt and pepper to taste. Blend or process this mixture until smooth and voilà! You have a delicious garlic aioli to pair with your Crispy Brussels Sprout Chips.

Ingredients:

  • Brussels Sprout Chips
  • 4 cups Brussels sprouts
  • 1 Tbsp. olive oil
  • Salt and pepper, to taste
  • Garlic Aioli
  • ½ cup nonfat plain Greek yogurt
  • 1 tsp. honey
  • 1 clove garlic
  • 1 tsp. lemon juice
  • ½ tsp. dried dill
  • Salt and pepper, to taste

Directions:

  1. Preheat oven to 400°F.
