She tells us why she loves this easy seasonal salad recipe: “Absolutely delicious way to use summer’s harvest of fresh local peaches and blueberries,” she says.

Carol uses a light Vidalia onion salad dressing with this recipe, but says that you can use any type of dressing that you prefer. She also recommends using sweet butter lettuce but explains that you can swap in whatever is available. We think romaine lettuce, baby spinach or a spring mix would also be delicious!

Ingredients:

  • 1 medium peach, diced
  • 1/2 cup blueberries
  • 1/8 cup feta cheese crumbles
  • 1 Tbsp. Pine Nuts
  • 2 cups sweet butter lettuce
  • 2 Tbsp. light vidalia onion salad dressing (or another light dressing)

Directions:

  1. Arrange lettuce in bowl after washing
  2. Top with diced peaches and blueberries.
  3. Sprinkle with feta cheese crumbles and pine nuts.
  4. Drizzle with dressing.
