An Easy Peach and Tomato Salad Recipe
To make this fresh and fun tomato salad, get started by placing one cup of arugula onto a serving plate. Chop up your tomatoes and place them on top of the arugula.

Next, slice up one peach and arrange it on the salad with two tablespoons of canned chickpeas (no salt added) and a few thin slices of red onion. Sprinkle a quarter of a cup of crumbled feta cheese on top before adding any dressing.

- ½ cup tri-colored cherry tomatoes, halved
- 1 plum tomato, halved and sliced
- 1 peach, sliced
- 2 Tbsp. chickpeas, canned, no salt added
- 3-4 thin slices red onion
- 1 cup arugula
- ¼ cup feta cheese, crumbled
- 1 Tbsp. balsamic vinegar
- 1 tsp. olive oil
- 1 tsp. honey
- Place arugula on a plate.
- Top with tomatoes, peach slices, chickpeas, red onion slices and feta cheese.
- In a small bowl, mix together the balsamic vinegar, olive oil and honey. Drizzle the dressing on top of the salad.
