- ½ cup tri-colored cherry tomatoes, halved
- 1 plum tomato, halved and sliced
- 1 peach, sliced
- 2 Tbsp. chickpeas, canned, no salt added
- 3-4 thin slices red onion
- 1 cup arugula
- ¼ cup feta cheese, crumbled
- 1 Tbsp. balsamic vinegar
- 1 tsp. olive oil
- 1 tsp. honey
- Place arugula on a plate.
- Top with tomatoes, peach slices, chickpeas, red onion slices and feta cheese.
- In a small bowl, mix together the balsamic vinegar, olive oil and honey. Drizzle the dressing on top of the salad.
