Ingredients:

  • ½ cup tri-colored cherry tomatoes, halved
  • 1 plum tomato, halved and sliced
  • 1 peach, sliced
  • 2 Tbsp. chickpeas, canned, no salt added
  • 3-4 thin slices red onion
  • 1 cup arugula
  • ¼ cup feta cheese, crumbled
  • Dressing
  • 1 Tbsp. balsamic vinegar
  • 1 tsp. olive oil
  • 1 tsp. honey

Directions:

  1. Place arugula on a plate.
  2. Top with tomatoes, peach slices, chickpeas, red onion slices and feta cheese.
  3. In a small bowl, mix together the balsamic vinegar, olive oil and honey. Drizzle the dressing on top of the salad.
