- 1 lime, zested and juiced
- 1 ½ Tbsp. olive oil
- ½ Tbsp. Cajun seasoning
- 1 tsp. chili powder
- 16 oz halibut fillet
- 1 small red onion, chopped
- 1 jalapeno pepper, seeded and chopped
- 2 cloves garlic, minced
- 6 tomatillos, peeled and chopped
- ¼ tsp. black pepper
- ½ tsp. ground cumin
- 1 lemon, zested and juiced
- 2 tsp. honey
- ½ avocado, diced
- 2 tomatoes, diced
- ¼ cup mango, diced into small pieces
- 4 whole wheat 6-inch flour tortillas
- 1 cup red cabbage, shredded
- Cilantro to garnish
- For marinade: In a small bowl, combine lime zest, juice, ½ Tbsp. olive oil, Cajun seasoning, and chili powder. Coat fish with dressing and let it sit for 30 minutes.
- For Tomatillo Sauce: Heat medium skillet with remaining 1 Tbsp. of oil over medium heat. Add the onions, jalapenos and garlic. Sauté for a few minutes or until the mixture begins to soften.
- For Tomatillo Sauce: Add chopped tomatillos. Season with black pepper and cumin. Cook for 6-7 minutes or until tomatillos soften.
- For Tomatillo Sauce: Add tomatillo mixture to food processor with lemon zest, juice and honey. Process until it becomes a thick salsa.
- Heat skillet over medium heat and coat with cooking spray. Add fish and cook for 3 to 4 minutes on each side.
- Serve fish with tortillas and top with cabbage, tomatoes, mango, avocado and tomatillo salsa. Garnish with cilantro.
