Ingredients:
- 4 cups rice cereal
- 2 Tbsp. light butter spread
- 2 cups mini marshmallows, packed
- 1 Tbsp. unsweetened cocoa powder
- ¼ tsp. mint extract
- 2 Tbsp. mini chocolate chips
Directions:
- Line an 8-inch square pan with parchment paper and set aside.
- Heat a large pan over low heat. Add light butter spread and melt. Once melted, add mini marshmallows. Stir with a rubber spatula until melted.
- After marshmallows have melted add cocoa powder and mint extract.
- Add rice cereal and fold together until a thick mixture is formed.
