Ingredients:

  • 6 oz boneless chicken breast
  • ½ cup red potatoes, sliced ¼-inch thick
  • ½ cup red and yellow bell peppers, sliced thinly
  • ¼ cup red onion, sliced thinly
  • 1 tsp. olive oil
  • ½ tsp. Cajun seasoning
  • ¼ tsp. black pepper

Directions:

  1. Preheat oven to 350 F
  2. Make horizontal slits across chicken breast.
  3. Season chicken with olive oil, Cajun seasoning, and black pepper.
  4. Add potato, bell pepper, and red onion slices to each slit.
  5. Place chicken on an aluminum-lined baking sheet. Add any leftover potatoes and vegetables to the pan.
  6. Bake for 45 or until chicken is cooked through.
