Today’s yummy treat is a delicious dessert that will knock your socks off. The foundation of every delicious (and healthy!) tart starts off with a whole wheat pastry flour. You’ll mix the whole wheat flour with the rest of the crust ingredients and then transfer the dough to a pan. The crust needs to be baked for about eight minutes and set aside to cool for a few more minutes. Add in the filling and now you’re ready to bake the whole tart!

Once the tart is baked and cooled as well, it’s time to top it off with a simply sweet blueberry topping. It’s made up of blueberries, lemon juice and a wee-bit of corn starch. And just like that, you have a delicious Lemon Blueberry Tart ready to serve to friends and family (or just for yourself—but remember to watch your portions!).

Ingredients:

  • Crust
  • ¾ cup whole wheat pastry flour
  • 2 Tbsp. Truvia® Cane Sugar Blend
  • ¾ tsp. baking powder
  • 1 tsp. vanilla extract
  • ¼ cup almond butter
  • 2 Tbsp. lite margarine
  • Filling
  • 8 oz. lite cream cheese, room temperature
  • 2 Tbsp. Truvia® Cane Sugar Blend
  • 1 egg
  • ½ tsp. lemon extract
  • Zest from 1 lemon
  • Blueberry Topping
  • 1 cup blueberries
  • 1 Tbsp. lemon juice
  • 1 tsp. corn starch

Directions:

  1. Preheat oven to 375 degree F. Spray 8-inch tart/pie pan with nonstick spray.
  2. Mix together crust ingredients until it sticks together. Transfer dough to pan and press dough into the pan.
  3. Bake for 8 minutes. Set aside
  4. Place cream cheese in a medium bowl. Using a hand mixture and blend until smooth. Add in sugar, egg, lemon extract and lemon zest and mix until smooth.
  5. Pour filling into crust.
  6. Bake for 15-18 minutes or until top of filling hardens a bit.
  7. Remove and allow to cool for 20 minutes.
  8. Place blueberry topping ingredients in a small saucepan. Heat until blueberries release their juices to form a sauce. Let cool.
  9. Pour topping over filling and refrigerate for at least an hour before serving.
