On Nutrisystem, Count As: 1 SmartCarb, 1 PowerFuel, ½ Vegetable and 1 Extra

Ingredients:

  • 1 package Nutrisystem Loaded Mashed Potatoes, prepared according to package directions
  • ½ cup baby spinach, roughly chopped
  • 1 Tbsp. fresh chives, chopped
  • ¼ tsp. garlic powder
  • ¼ tsp. ground black pepper
  • 3 Tbsp. egg whites

Directions:

  1. Prepare Nutrisystem Loaded Potatoes according to package directions.
  2. Scoop into a bowl. Stir in chopped baby spinach, chives, and seasonings. Let cool slightly, then mix in 3 Tbsp. egg whites.
  3. Heat a large nonstick skillet over medium heat. Mist lightly with nonstick cooking spray.
  4. Scoop 4 “pancakes” into the skillet (about 3 Tbsp. each). Flatten slightly with the back of a spatula and cook until golden brown, flip and cook for an additional 3 to 5 minutes.
