Ingredients:

  • 1 lb. grape tomatoes, sliced in half
  • 1 Tbsp. olive oil
  • 1 Tbsp. minced garlic
  • 1 tsp. sugar
  • Sea salt and black pepper, to taste
  • 5-10 fresh basil leaves, julienned

Directions:

  1. Preheat oven to 450 degrees F. Line a large baking sheet or roasting pan with foil and spray with non-stick cooking spray.
  2. In a bowl, combine tomatoes, olive oil, minced garlic, salt and pepper. Spread tomatoes in the prepared pan, in a single layer.
  3. Bake for 25-30 minutes, until tomatoes begin to caramelize. Remove from oven, and sprinkle with fresh basil before serving.
