Zesty Tomatoes and Cheese

One of the great things about tomatoes is that they’re available year-round. Plus, they’re extremely versatile, making them an easy vegetable to sneak into your diet! On Nutrisystem, Count As: 1 PowerFuel, 1 Vegetable and 1 Extra


  • 2 large tomatoes, sliced into 3 slices each
  • 1/2 cup grated Parmesan cheese, low sodium
  • 2 tablespoons parsley (or oregano)
  • 2 teaspoons olive oil
  • Salt and pepper (to taste)


  1. Preheat oven to 450 degrees
  2. Place tomatoes on baking sheet, top with cheese, parsley and seasonings
  3. Drizzle with oil and bake till cheese browns (about 10 minutes)
