On Nutrisystem, Count As: 1 PowerFuel, 1 Vegetable and 1 Extra
Ingredients:
- 2 large tomatoes, sliced into 3 slices each
- ½ cup grated parmesan cheese, low sodium
- 2 Tbsp. parsley (or oregano)
- 2 tsp. olive oil
- Salt and pepper, to taste
Directions:
- Preheat oven to 450°F
- Place tomatoes on baking sheet. Top with cheese, parsley and seasonings.
- Drizzle with oil and bake until cheese browns (about 10 minutes).
