Zesty Tomatoes and Cheese

One of the great things about tomatoes is that they’re available year-round. Plus, they’re extremely versatile, making them an easy vegetable to sneak into your diet! Watch as Nutrisystem’s very own Deanna Otranto demonstrates how to prepare a super simple and tasty tomato recipe, Tomatoes and Cheese.

On Nutrisystem, Count As: 1 PowerFuel, 1 Vegetable and 1 Extra

Ingredients:

  • 2 large tomatoes, sliced into 3 slices each
  • 1/2 cup grated Parmesan cheese, low sodium
  • 2 tablespoons parsley (or oregano)
  • 2 teaspoons olive oil
  • Salt and pepper (to taste)

Directions:

  1. Preheat oven to 450 degrees
  2. Place tomatoes on baking sheet, top with cheese, parsley and seasonings
  3. Drizzle with oil and bake till cheese browns (about 10 minutes)
