Powerhouse Pumpkin Hummus

This powerhouse pumpkin hummus will be sure to fill you up with just a few simple ingredients.

Servings: Makes 2 servings

On Nutrisystem, Count As: 1 Extra

Ingredients:

  • 1 cup pumpkin cubes
  • 2 garlic cloves, minced
  • 1/2 lemon, juiced
  • Zero calorie cooking spray
  • 1/4 teaspoon cumin seeds
  • 2 tablespoons water
  • Salt and pepper (to taste)

Directions:

  1. Preheat oven to 400 degrees
  2. Spray pumpkin cubes with cooking spray then sprinkle with garlic, salt and cumin
  3. Roast until golden (about 15-20 minutes)
  4. Blend roasted pumpkin, garlic, water and lemon juice into a hummus-like texture
