Simply place all ingredients, excluding walnuts and bread crumbs, in a food processor and pulse until smooth. Add in walnuts and whole wheat crumbs and pulse until the dip is chunky. Sprinkle with pomegranate seeds to serve and dip in your favorite veggie or whole wheat pita slices.

Ingredients:

  • 1 cup jarred roasted red bell peppers, drained
  • ½ Tbsp. minced garlic
  • Juice of 1 lemon
  • ½ Tbsp, pomegranate molasses
  • 1 tsp. ground cumin
  • ½ tsp. crushed red pepper flakes
  • ½ tsp. salt
  • 2 tsp. olive oil
  • ¹⁄₃ cup walnuts
  • ¹⁄₃ cup whole wheat bread crumbs
  • 1 Tbsp. pomegranate seeds, for serving (optional)

Directions:

  1. Place all ingredients except walnuts and bread crumbs in food processor and blend until smooth.
  2. Add walnuts and bread crumbs and pulse until combined, but still chunky.
  3. Top with pomegranate seeds before serving.
