Servings: 4 (1 serving = 1 cup)

On Nutrisystem, Count As: 1 Vegetable and 1 Extra

Ingredients:

  • ¼ white onion, diced
  • 2 garlic cloves
  • 1 tsp. olive oil
  • 1 14.5 oz. can diced tomatoes, no salt added
  • 1 cup vegetable broth, low sodium
  • Pepper, to taste
  • ¾ cup plain unsweetened almond milk
  • 1 bay leaf
  • 1 basil leaf, chopped (optional)

Directions:

  1. In a pot over medium high heat, add olive oil
  2. Sauté onion and garlic
  3. Add tomatoes, vegetable broth, and pepper
  4. Bring to boil, then reduce heat to a simmer for 15 minutes
  5. With an immersion blender or a food processor, blend soup until smooth
  6. Bring back to pot, add milk and bay leaf and let simmer for another 15 minutes
  7. Remove bay leaf
  8. Serve and garnish with chopped basil
