Zucchini and Sweet Corn Pasta Salad

We’re serving up two summertime staples—zucchini and sweet corn—in one delicious picnic pasta salad!
Featuring whole wheat pasta and creamy ricotta cheese, this easy summer salad recipe is sure to be a hit at your next barbecue. Simply sauté zucchini, minced garlic and black pepper in olive oil over medium-high heat for about 10 minutes. Once the zucchini is soft, add in the sweet corn and fresh basil. Cook for two minutes, then stir in part skim ricotta cheese and the whole wheat pasta. Finally, garnish with parmesan cheese and any fresh herbs you’re craving!
Pro Tip: You can enjoy this Zucchini and Sweet Corn Pasta Salad warm and straight out of the pan. However, we think it’s just as good chilled and served as a cold side salad. It’s perfect for those hot summer days!

Ingredients:
- 2 cups whole wheat pasta, cooked
- 1 Tbsp olive oil
- 2 cups zucchini, quartered and sliced
- 2 cloves garlic, minced
- black pepper, to taste
- 1 cup corn
- ½ cup ricotta cheese, part skim
- ½ cup parmesan cheese
- ¼ cup fresh basil, chopped
Directions:
- Heat olive oil in a medium skillet over medium-high heat.
- Add in zucchini, garlic and pepper. Cook for 10 minutes, until zucchini is soft.
- Add in corn and basil. Cook for 2 minutes.
- Stir in ricotta cheese and pasta. Mix well.
- Garnish with parmesan cheese. Serve warm or chilled.
