Ingredients:

  • Kebabs
  • ½ lb. shrimp
  • ½ lb. scallops
  • 1 zucchini, sliced about ¼-inch thick
  • ½ red onion, sliced into 1-inch chunks
  • 1 bell pepper, sliced into 1-inch pieces
  • Skewers
  • Lemon Garlic Butter
  • 1 Tbsp. light butter, melted
  • 1 tsp. minced garlic
  • 1 lemon, juiced
  • 1 Tbsp. fresh parsley, chopped

Directions:

  1. Preheat the grill and spray with nonstick spray.
  2. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  3. Thread the skewers with scallops, shrimp, zucchini, red onion and bell pepper.
  4. In a small bowl, mix together the lemon garlic butter ingredients. Brush half of the mixture over kebabs.
  5. Place the kebabs onto the grill and cook 4-5 minutes per side, until seafood is completely cooked.
  6. Brush the kebabs with the remaining lemon garlic butter before serving.
