Garlic and Mint Lamb Chops with Spinach and Mashed Sweet Potatoes

How to Cook Lamb Chops
This recipe has a few components, but let’s start with the star of the show: Lamb chops!
To make this lamb loin chops recipe, get started by preheating the oven to 400°F. You’ll also need to prep a cast-iron skillet with olive oil over medium-high heat.
Season the lamb chops with black pepper to taste, then sear them in the skillet for two minutes per side. Pop them in the oven for about 10 to 14 minutes, or until they reach your desired temperature. (According to the U.S. Department of Agriculture, raw lamb chops should be cooked to an internal temperature of 145°F as measured with a food thermometer before removing it from the heat source.) When your lamb chops are done cooking, let them rest for three minutes.
Now that the lamb chops are taken care of, let’s make a tasty sauce to top them with. Mint and lamb is a classic pairing (many people love mint jelly with lamb chops!), so we had to include it in this flavorful blend of ingredients.
Prepare our mint sauce for lamb chops by combining olive oil, minced garlic, rice vinegar, low sodium soy sauce, sesame oil, fresh mint and a pinch of red pepper flakes. Whisk the ingredients together and set the sauce aside until you’re ready to serve dinner.
Simple Side Dishes for Lamb
With such as fancy and flavorful main course, you can get away with serving some simple side dishes that don’t require much effort. But despite being easy to prepare, these two additions don’t disappoint! They pack in the nutrition and flavor with simple staples and a few easy steps.
Get in your veggie servings with a little help from some Sautéed Garlic Spinach. Simply heat some olive oil in a pan over medium heat, then add minced garlic and spinach leaves. Cover and cook until the spinach has wilted. Season the side with a bit of black pepper to taste.
In addition to this lean, green side dish, we also cooked up some creamy mashed potatoes to go with the lamb. However, these aren’t just any ordinary mashed spuds. They are made with sweet potatoes for even more flavor and fiber!
To make them, steam sweet potatoes until they are soft. Then mix in minced garlic, black pepper, fresh rosemary and unsweetened almond milk. Mash until the potatoes reach your desired consistency.
For a romantic dinner for two, assemble two dinner plates with the sautéed spinach, mashed sweet potatoes and cooked lamb chops. Drizzle the lamb chops with the garlic mint sauce and serve.

Ingredients:
- 6 oz. lean lamb loin chops
- Black pepper, to taste

- 1 clove garlic, minced
- 1 Tbsp. rice vinegar
- 1 Tbsp. soy sauce, low sodium
- ½ Tbsp. sesame oil
- 1 Tbsp. fresh mint, chopped
- 1 pinch red pepper flakes
- 1 sweet potato, peeled
- ¼ tsp. minced garlic
- 1 tsp. fresh rosemary, chopped
- Black pepper, to taste
- 2 Tbsp. unsweetened almond milk (or any milk)
- 4 cups spinach leaves
- 1 tsp. minced garlic
- Black pepper, to taste
- 2 tsp. olive oil
Directions:
- Lamb Chops
- Preheat oven to 400°F.
- Season lamb chops with black pepper.
- Heat 1 tablespoon of olive oil in a cast-iron skillet over medium-high heat.
- Once hot, add lamb chops and cook for 2 minutes per side.
- Place in the oven and cook for 10-14 minutes, until it reaches desired temperature (145°F minimum). Let rest for 3 minutes.
- Garlic Mint Sauce
- Whisk together the sauce ingredients. Set aside.
- Mashed Sweet Potatoes
- Steam sweet potatoes until soft.
- Mix in garlic, pepper, rosemary and milk. Mash until potatoes reach desired consistency.
- Sautéed Garlic Spinach
- Heat oil in a pan over medium heat.
- Add garlic and spinach. Cover and cook until wilted. Season with pepper.
- To Serve
- Assemble plate with sautéed spinach, mashed sweet potato and lamb chops. Drizzle lamb with garlic mint sauce.
