Ingredients:

  • 1 lb. lean beef stew (beef chuck) meat, cut into large chunks
  • 2 Tbsp. whole wheat flour
  • 3 Tbsp. olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 16 oz. sliced mushrooms
  • 3 carrots, peeled and sliced
  • 2 parsnips, peeled and sliced
  • 2 cups chopped potatoes
  • 4 cups beef broth, low sodium
  • 1 (6 oz.) can tomato paste
  • ½ tsp. black pepper
  • 2 bay leaves
  • 3 sprigs fresh thyme

Directions:

  1. Preheat oven to 325°F.
  2. Coat beef in flour.
  3. Heat 2 tablespoons of oil in a large Dutch oven over medium-high heat. Once hot, brown the meat for a few minutes per side. Set aside.
  4. Add remaining 1 tablespoon of oil to Dutch oven. Add onions and garlic. Sauté for 2-3 minutes.
  5. Add mushrooms and cook for 5-7 minutes.
  6. Add a little bit of broth and stir to loosen any brown bits from the bottom of the Dutch oven. Add remaining broth, tomato paste, pepper, bay leaves and thyme sprigs. Stir to combine.
  7. Transfer to the oven and cook for 90 minutes, uncovered.
  8. Remove from the oven and add carrots, parsnips and potatoes. Cover with the lid and place back in the oven for 60 minutes.
  9. Remove bay leaves and thyme sprigs before serving.
