Air Fryer BBQ Potato Skins

Prep the russet potato by piercing it several times and popping it in the oven until tender. Slice the potato in half lengthwise and scoop out flesh, leaving a quarter-inch lining. Place the potatoes in the air fryer for about five minutes.

In a large mixing bowl, combine pulled chicken or pork and BBQ sauce. Evenly distribute the shredded chicken between halves and top with cheese. Complete this recipe by topping with a scoop of sour cream for added creaminess!

Ingredients:

  • 1 small russet potato
  • Nonstick spray
  • 2 oz. shredded chicken or pork
  • 1 Tbsp. BBQ sauce
  • ¼ cup cheddar cheese, low fat
  • 1 Tbsp. reduced fat sour cream

Directions:

  1. Preheat oven to 400°F.
  2. Pierce potato several times with a fork or knife. Place potato on oven rack and bake until knife easily pierces the potato, about 50 minutes.
  3. Let potato cool for 10 minutes.
  4. Preheat air fryer to 350°F.
  5. Slice potato in half lengthwise. Using a spoon, scoop out flesh, leaving about ¼ inch intact.
  6. Place in air fryer, spray potato with nonstick spray, and cook for 5 minutes.
  7. In a bowl, combine pulled chicken/pork and BBQ sauce.
  8. Fill each skin evenly with BBQ chicken/pork. Cook for another 5 minutes.
  9. Top with cheese and cook for 2-3 minutes or until cheese has melted.
  10. Top each potato with sour cream.
