Ingredients:

  • 6 cups fresh baby spinach. steamed
  • 1.5 cups non-fat plain Greek yogurt, drained
  • ½ cup pine nuts
  • 2 Tbsp. garlic, minced
  • ¼ cup thinly sliced scallions
  • 1 Tbsp. fresh dill, minced
  • 1 Tbsp. fresh lemon juice
  • ½ cup red bell pepper, chopped

Directions:

  1. Drain spinach then chop and add to medium bowl.
  2. Combine remaining ingredients.
  3. Season as desired.
