On Nutrisystem, Count As: 1 SmartCarb, 2 PowerFuels, 1 Vegetable
- 6 oz boneless chicken breast
- 1 cup cooked spinach
- ½ cup low fat pepperjack cheese
- 1 cup cooked quinoa
- 1 Tbsp. bread crumbs
- ½ tsp. cajun seasoning
- ½ tsp. paprika
- Black pepper, to taste
- Preheat oven to 350 F.
- Cut down the side of the chicken to make a pocket.
- In a small bowl, combine cheese, spinach, quinoa and pepper.
- Spoon the spinach mixture into the pocket of the chicken. Fasten with toothpicks.
- Sprinkle chicken with Cajun, paprika and bread crumbs.
- Top with any remaining spinach mixture.
- Place chicken onto a foil-lined baking sheet. Bake for 45-60 minutes or until chicken is cooked through.
