Start whipping up the recipe by grabbing two slices of your favorite and healthiest bread—we recommend whole wheat sourdough. Lightly toast the bread as you grill the asparagus. To grill it, spray a large pan with nonstick spray and heat to medium-high. Toss in the asparagus, throw the lid on, and let it cook for a few minutes. While the asparagus is grilling, you’ll become a multitasking master and begin to poach the eggs.

Grab a pot, fill it with water and a splash of vinegar, then bring it to a boil. Crack the egg into the pot and let it cook for two to three minutes. Remove the egg from the pot with a slotted spoon and then you’re ready to assemble!

Spread one tablespoon of mashed avocado onto each slice of bread and top them each with four slices of asparagus, an egg and season to taste with black pepper. Easy as one, two, three you have a delicious breakfast to add some fun to your morning routine!

  • 2 slices whole wheat sourdough bread
  • 2 Tbsp. mashed avocado
  • 8 asparagus spears, ends trimmed
  • 2 eggs
  • Black pepper, to taste
  • Splash of vinegar


  1. Lightly toast bread.
  2. To grill asparagus: Spray large pan with nonstick spray and heat at medium-high. Add asparagus, cover and cook for 3-4 minutes.
  3. To poach eggs: Bring a medium pot of water and a splash of vinegar to a boil. Crack egg into pot and let cook for 2-3 minutes. Remove with a slotted spoon.
  4. To assemble: Spread 1 tablespoon of mashed avocado on each slice of bread. Top with 4 slices of asparagus, egg and a dash of black pepper.
