Ingredients:

  • 6 slices whole wheat bread, cut into cubes
  • 3 eggs
  • 2 ripe bananas, mashed
  • ½ cup unsweetened almond milk
  • 2 tsp. cinnamon

Directions:

  1. Spray a baking pan with nonstick spray.
  2. Add bread cubes to the pan.
  3. In a mixing bowl, whisk together mashed bananas, eggs, milk, cinnamon and vanilla.
  4. Pour the mixture evenly over the bread dish.
  5. Refrigerate for at least 30 minutes, stirring mixture at the 15-minute mark.
  6. Gently stir in the berries.
  7. Preheat oven to 350°F. When preheated, bake the French toast casserole for 40 minutes.
