On Nutrisystem, Count As: 2 PowerFuels, 1 Extra and 1 Vegetable

Ingredients:

  • 4 portobello mushroom caps
  • 1 tsp. olive oil
  • 1 tsp. everything bagel seasoning
  • 2 slices turkey bacon, low sodium
  • 2 eggs
  • 1 slice provolone cheese, reduced fat

Directions:

  1. Preheat oven to 400°F. Line 2 baking sheets with foil.
  2. Clean mushroom caps and spoon out the stems and gills.
  3. Brush the top of each mushroom with olive oil and sprinkle with everything bagel seasoning. Place onto the baking sheet with the tops facing up.
  4. Place turkey bacon on the other baking sheet.
  5. Bake the mushrooms and bacon for 15 minutes.
  6. In the meantime, scramble eggs in a pan on the stove top.
  7. Assemble the sandwich by spooning the scrambled eggs into two mushroom caps. Top the eggs with a ½ slice of cheese and turkey bacon. Top each sandwich with another mushroom cap.
