On Nutrisystem, Count As: 1 SmartCarb and 1 Extra
- 1 cup whole wheat flour
- ½ tsp. baking powder
- ½ tsp. baking soda
- 1 ¼ cup nonfat milk
- 1 egg
- 1 ½ Tbsp. coconut oil, melted
- ¼ tsp. cinnamon
- 1 cup blueberries
- Preheat oven to 400°F. Spray a mini muffin tin with nonstick spray.
- Combine flour, baking powder and baking soda in a large bowl.
- Stir in milk, egg, melted coconut oil and cinnamon. Mix well.
- Scoop a spoonful of the batter into each muffin cup (recipe makes 24 mini muffins).
- Top the muffins with blueberries or another topping of choice.
- Bake for 10 minutes or until a toothpick comes out clean.
