What’s any holiday without Caramel Corn? Loads of sugar and the accompanying calories cause this classic holiday treat to be avoided at all costs when it comes to losing weight. And that’s why we created a Lightened-Up Caramel Corn recipe that’s just as delicious (and a whole lot healthier!) than any store-bought version.

Whenever you decide to “indulge” in this holiday sweet treat, your taste buds and waistline will be thanking you. What can possibly make this Caramel Corn recipe even better? It’s super simple to make. We’re talking three-step, five-ingredient easy. Combine coconut oil, maple syrup and vanilla extract until melted and boiling. Remove from heat and stir in a dash of salt. Let this mixture cool for about two minutes. Drizzle the “caramel” on top of three cups of air-popped popcorn, spread out on parchment paper, and let cool for 30 minutes so the caramel can harden.

  • 3 cups air popped popcorn
  • ¼ cup sugar free maple syrup
  • 1 Tbsp. coconut oil, melted
  • 1 tsp. vanilla extract
  • Dash of sea salt


  1. Combine oil, syrup and vanilla in a small saucepan. Boil for 2 minutes then remove from heat and stir in dash of salt. Let cool for 2 minutes.
  2. Drizzle on popcorn and toss to coat.
  3. Spread out onto parchment paper to cool for 30 minutes.
