Ingredients:
- 9 oz. boneless chicken breast
- ½ tsp. black pepper
- 2 cups cooked brown rice
- ½ cup diced tomatoes
- ½ cup frozen spinach, thawed and drained
- ¼ cup grated mozzarella cheese, low-fat
- 1 Tbsp. dried basil
- 1 Tbsp. olive oil
Directions:
- Slice chicken breast in half. Pound with a mallet until ¼ inch thick.
- Season with pepper.
- In a mixing bowl, combine rice, tomatoes, mozzarella cheese, spinach and basil.
- Spoon some of the rice mixture on top of chicken breast. Fold and secure with string and/or toothpicks.
- In a skillet, heat oil and brown chicken on both sides for one minute or until golden.
- In a baking dish, add the rest of the rice mixture. Remove chicken from skillet and place on top of remaining rice. Bake 350 F for 10-15 minutes or until fully cooked.
