Servings: Makes 4 servings

Calories per Serving: 244

On Nutrisystem, Count As: 1 SmartCarb, 1 PowerFuel and 1 Extra


  • 9 oz. boneless chicken breast
  • ½ tsp. black pepper
  • 2 cups cooked brown rice
  • ½ cup diced tomatoes
  • ½ cup frozen spinach, thawed and drained
  • ¼ cup grated mozzarella cheese, low-fat
  • 1 Tbsp. dried basil
  • 1 Tbsp. olive oil


  1. Slice chicken breast in half. Pound with a mallet until ¼ inch thick.
  2. Season with pepper.
  3. In a mixing bowl, combine rice, tomatoes, mozzarella cheese, spinach and basil.
  4. Spoon some of the rice mixture on top of chicken breast. Fold and secure with string and/or toothpicks.
  5. In a skillet, heat oil and brown chicken on both sides for one minute or until golden.
  6. In a baking dish, add the rest of the rice mixture. Remove chicken from skillet and place on top of remaining rice. Bake 350 F for 10-15 minutes or until fully cooked.
