Bread pudding made with eggnog? Talk about a Christmas miracle! Two seasonal sweet treats unite in this chocolaty dessert that’s perfect for the holiday season. Indulge in the rich flavors of cocoa paired with creamy eggnog, all baked to perfection in a moist bread pudding.

You only need five simple ingredients to make this fancy and festive recipe. In a mixing bowl, combine six slices of cubed whole wheat bread with one egg, one and a half tablespoons of unsweetened cocoa powder, one tablespoon of white sugar and one cup of light or low-fat eggnog. Mix well and let the bread pudding mixture sit for about 30 minutes to absorb all of the flavors. While it’s sitting, preheat the oven to 325 degrees.

Instead of making one large eggnog bread pudding, we divide the mixture up into six oven-safe ramekins. This helps with proper portion control and allows everyone to have their own personal pudding to top with their favorite garnishes! You can double or triple the recipe to account for the number of guests you’re having over for the holidays.

Spray each ramekin with nonstick cooking spray, then pour in the bread pudding mixture. Cover and bake the puddings for 35 minutes, then uncover and bake for another 10 minutes. Serve the dessert warm and enjoy with a dollop of low-fat whipped cream if desired (just count this as another Extra).
