The first step to preparing this Cucumber Vinegar Salad recipe is to chop up your vegetables into bite-sized pieces. You’ll need two cups of chopped tomatoes, one cup of chopped onions and one cup of chopped cucumbers. Place the chopped vegetables into a large salad bowl and add 24 small green olives. Pour in the vinegar of your choice and season with salt and pepper to taste. Finally, lightly toss all of the ingredients together before serving.
Healthy Hint: The vinegar, salt and pepper don’t have specific measurements provided because they are considered Free Foods on Nutrisystem. Start by adding a little bit of each and gradually increase them until you get the desired taste you’re craving. Just be careful not to add too much salt! You can also feel free to add other low calorie spices, such as garlic powder, oregano or dried basil.
You can use any type of vinegar that you enjoy, from red or white wine vinegar to apple cider vinegar. If you go for balsamic vinegar, keep in mind that this contains more calories than other varieties and is considered an Extra on Nutrisystem.
