Ingredients:

  • 2 cups green beans
  • 1 eggplant, cut into thin strips
  • 1 Tbsp. cornstarch
  • 3 Tbsp. canola oil, divided
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 tsp. honey
  • 1 tsp. grated ginger
  • 2 Tbsp. soy sauce, low sodium
  • 1 pinch red pepper flakes
  • 1 tsp. sesame seeds

Directions:

  1. Toss eggplant in cornstarch.
  2. Heat 2 tablespoons of oil in a large pan over medium-high heat. Once hot, add eggplant and cook for about 5 minutes or until it is slightly brown and tender. Remove eggplant from the pan.
  3. Turn down the heat to medium. Add in the remaining oil and add garlic, ginger, green beans and bell peppers. Cook for another 5 minutes, until vegetables are soft.
  4. Return eggplant to the pan and pour in soy sauce, honey and red pepper flakes. Toss to combine. Stir fry for 1-2 minutes.
  5. Garnish with sesame seeds.
