Ingredients:

  • 2 lobster tails (about 3-4 oz. each)
  • 1 Tbsp. light butter, melted
  • 1 Tbsp. lemon juice
  • 1 clove garlic, minced
  • ¼ tsp. paprika
  • Chopped parsley (garnish)

Directions:

  1. Preheat the grill.
  2. Butterfly lobster by cutting a slice through the top shell lengthwise, stopping just before the fin of the tail. Try not to cut all the way through the meat. Flip the tail over and press down onto the ribs to crack each one. Flip it over again and slip the meat out to prop over the shell. The meat will still be attached to the fins.
  3. In a small bowl, whisk together the melted light butter, garlic, lemon juice and paprika.
  4. Brush the lobster tails with half of the butter mixture (save the rest) and place onto the preheated grill, meat side down.
  5. Grill for about 5 minutes. Flip the lobster tails over and grill for 2-3 more minutes, until flesh turns opaque.
  6. Brush the lobster tails with the remaining butter mixture and garnish with chopped parsley. Serve immediately.
