Ingredients:

  • ½ cup steel cut oats
  • 1 cup water
  • ½ cup unsweetened almond milk
  • 2 cups plain nonfat Greek yogurt
  • ¼ cup peanut butter
  • 2 cups strawberries, halved
  • 1 Tbsp. chia seeds
  • ½ lemon, juiced

Directions:

  1. To make the steel cut oats, place water and milk in a pot and bring to a boil. Add in oats and stir to incorporate. Cover the pot and turn heat to low and let simmer for 20-30 minutes. Oats should become creamy.
  2. In the meantime, make the strawberry jam by placing the strawberries in a pot and bring it to a boil. Once strawberries are warmed throughout and releasing their juices, lightly mash with a fork. Add in lemon juice and chia seeds. Turn off heat and set aside to thicken.
  3. Soften the peanut butter to a more liquid consistency by placing in the microwave for 20-30 seconds.
  4. In each bowl, add in ½ cup yogurt, 1 Tbsp. of peanut butter, ¼ cup oats and ½ cup strawberry jam.
