Ingredients:

  • 1 cup sliced strawberries
  • 1 cup cantaloupe cubes or balls
  • 1 cup cubed pineapple
  • 2 kiwi fruit, peeled and sliced
  • ½ cup blueberries
  • ½ cup red grapes, sliced in half
  • ½ cup light whipped topping
  • ¼ cup nonfat vanilla Greek yogurt
  • 1 small banana, sliced

Directions:

  1. Create arched rows of fruit on a serving tray that represent the colors of the rainbow (save the banana).
  2. Mix together whipped topping and Greek yogurt. Pile at one end of the rainbow to form a cloud.
  3. Place the banana slices in a small bowl or container (this is your pot of gold coins!). Put at the other end of the rainbow.
